oat and raisin cookies.


  • 1tbsp ground flaxseed
    • mixed with 2tbsp boiling water
  • 110g butter (stork)
  • 60g caster sugar
  • 60g dark brown sugar
  • 50g golden syrup
  • pinch of salt
  • 1tsp of vanilla
  • 1tsp of cinnamon
  • 0.5tsp of ginger
  • 0.5tsp bicarbonate of soda
  • 145g plain flour
  • 100g raisin
  • 130g jumbo oats


  1. preheat the oven to 180c
  2. mix flax and boiling water and set aside
  3. whisk flour, bicarb,cinnamon,ginger and and salt
  4. electric mix butter, sugar and golden syrup till fluffy in a separate bowl
  5. add vanilla and flax egg to butter and sugar
  6. slowly mix in flour
  7. mix in oats and raisin
  8. use 1 heaped table spoon of mixture per cookie on baking paper
  9. bake for 8-9 minutes
    • bake in batches to work out ideal baking time
    • cookies will be molten when out the oven
    • leave to cool
