ingredients
- 1tbsp ground flaxseed
- mixed with 2tbsp boiling water
- 110g butter (stork)
- 60g caster sugar
- 60g dark brown sugar
- 50g golden syrup
- pinch of salt
- 1tsp of vanilla
- 1tsp of cinnamon
- 0.5tsp of ginger
- 0.5tsp bicarbonate of soda
- 145g plain flour
- 100g raisin
- 130g jumbo oats
method
- preheat the oven to 180c
- mix flax and boiling water and set aside
- whisk flour, bicarb,cinnamon,ginger and and salt
- electric mix butter, sugar and golden syrup till fluffy in a separate bowl
- add vanilla and flax egg to butter and sugar
- slowly mix in flour
- mix in oats and raisin
- use 1 heaped table spoon of mixture per cookie on baking paper
- bake for 8-9 minutes
- bake in batches to work out ideal baking time
- cookies will be molten when out the oven
