ingredients

  • 340g dark chocolate
    • I use half bournville and the other half 54% dark cooking chocolate
  • 170g butter (stork)
  • 3 tbsp golden syrup
  • 3 tbsp sugar
  • 6 tbsp cocoa powder (bournville)
  • 340g biscuits
    • I use half oreos and the other digestives

method

  1. put broken up chocolate in a bain marie to melt
    • or in a glass bowl resting on a saucepan of boiling water
  2. melt the butter, golden syrup, sugar and cocoa powder together
  3. in a large mixing bowl crush the bicuits with a potato masher
    • the largest chunks should be no bigger than 2cm, but don't over crush
  4. pour the molten sugar/butter over the biscuits mix well
  5. line a baking dish with baking paper
  6. pour thebiscuit mixture into the dish and compress with a silicone spatula
  7. pour the melted chocolate over the top and even out
  8. leave on the side to cool
    • don't put in fridge (hard to cut)
  9. allow to partially set for 1.5 hours
  10. cut with a sharp knife then leave to cool completely
